Como chef recién titulado, Colagreco se dirigió a Francia y trabajó con Bernard Loiseau,con Alain Passard y Alain Ducasse. Todos ellos tres estrellas Michelin. Colagreco estableció Mirazur en Menton. Apenas seis meses después de la apertura recibió el premio 'Revelación del año' y en menos de un año obtuvo su primera estrella Michelin. Mauro ha impuesto un estilo propio en la interpretación del producto y el contraste de sabores que se basa en su capacidd de hacer platos efímeros para un solo servicio simplemente porque ve un producto que le inspira.
